REI makes some cool 'tall' tents that probably fit your parameters.

kind of pricey, but very good quality stuff. I've not set up one of
those myself, but I've watched someone set one up pretty quickly.

I do want to mention, using a cot inside a tent tends to trash the tent
floor and wear holes in it. I'd try and find a cot that has legs that
are like a square u such that there's a straight tube across the floor
and not just legs, and put some foam, maybe plumbing insulatation, on
those crossbars.... eg, something like this,

a minor downside is, the cots with those U legs tend to be a bit tippy
when you get in/out of them.
