usually, I'll plan my lists by what I need to get by constellation for that particular night. So if I see in my Messier list that I (still) need a bunch in Virgo, I'll make a sublist for virgo. I do this for all the constellations that are placed nicely for a night.
It keeps me on track and doesn't seem too overwhelming.
